When the leaves start to turn on Broadway, the ovens at Forno Bistro do what they do best: bring the season to the table. Our new fall menu leans into cozy, wood-fired flavors, fresh produce, and a few playful twists on classics. Think slow braises, earthy vegetables, rich cheeses, and the kind of pastas and pizzas that make a crisp night feel a little warmer.

New Seasonal Creations

Autunno (Vegetarian)

Kale, drunken cranberries, and julienned apples meet a candied hazelnut crumble for crunch. Goat cheese brings creaminess, and a maple-cider vinaigrette ties it all together. It is bright, textured, and very fall.

Burrata (Vegetarian)

Whipped burrata with wood-fired beets and spiced butternut squash, finished with arugula, pepitas, a light honey-balsamic glaze, and warm garlic-parmesan focaccia. Creamy, roasty, a little sweet, a little savory.

Maiale Pizza

A rich, wood-fired pizza topped with gruyere and mozzarella, pork belly, piquillo peppers, spinach and white sauce. Smoky, savory, and perfectly satisfying.

Rigatoni Vegetali (Vegetarian)

Rigatoni tossed with shaved Brussels sprouts and butternut squash in maple-sage butter. It is comfort food with a garden-forward spirit.

Burrata Ravioli

Pillowy ravioli filled with burrata, finished with sausage, kale, blistered tomatoes, roasted garlic, white wine, and rosemary. A hearty, aromatic bowl made for sweater weather.

Polpo (Gluten-Free)

Grilled octopus with braised fava beans and kale, a touch of pork belly for richness, and a piquillo pepper tapenade for brightness. A rustic Italian seaside moment, right here in Saratoga Springs.

Costolette Brasate

Red wine-braised short ribs with a chili-cider glaze. Deep, slow-cooked flavor, a gentle autumn spice, and fall-off-the-fork tenderness.

Pollo Panato

Our classic breaded chicken breast now topped with a bright, fresh tomato bruschetta, melted mozzarella and fontina, prosciutto, lemon, and fresh herbs.
